Warm up and stay healthy with this delicious slow cooked chicken chilli con carne. Slow cookers are a fabulous way of staying on track with healthy eating and help you avoid alling into the fast food trap.
Put it on before you leave for work (or overnight) and have your meals ready for the week!
INGREDIENTS
· 500g chicken mince
· 1 small brown onion, peeled and diced
· 2 stalks celery, diced
· 1 green capsicum, diced
· 2 cloves garlic, crushed
· 1 (700g) jar tomato pasta sauce
· 2 (400g) cans kidney beans, liquid reserved from one can
· 2 (400g) cans cannellini beans, liquid reserved
· 2 teaspoons chilli powder
· 1/2 tsp dried parsley
· 1 teaspoon salt
· 3/4 teaspoon dried basil
· 3/4 teaspoon dried oregano
· 1/4 teaspoon ground black pepper
DIRECTIONS
Preparation: 15min › Cook: 8hours › Ready in: 8hours 15min
Cook mince in an oiled large frying pan over high heat, stirring, until browned.
Place the mince in a slow cooker and stir in remaining ingredients including bean liquids.
Cover and cook, on low setting, for 8 hours.
Serve with a crisp green salad, yum!
